After our Granddaughter was diagnosed with Aspergers and witnessing the challenges that our Daughter and Son-in-law faced with this condition- I found myself on a quest to try to make life even a bit easier for them all.
 
I saw Oprah on tele one day discussing the link between Gluten and Dairy with the Autism Spectrum of disorders and how the elimination of these from the diet of an Aspergers or Autistic child could dramatically improve their behavioural problems.
We immediately did this for Bella and found that after an initial period of withdrawal, she really started to show signs of marked improvement in many areas.
 
The difficulty has been in finding interesting and yet affordable foods for her to enjoy to avoid falling back into the relative ease and lower cost of ordinary foods.
That is what has driven me to embark on creating recipes for children to enjoy that are easy and relatively inexpensive for busy parents.
 
These children need to have foods that are not so different from what other children are having – they face enormous daily differences as it is.
Children’s Birthday Parties need to be fun, colourful and above all else…naughty and tasty!!!
 
The wonderful news is…..THEY CAN BE!!!!!!!
The grocery bill can jump to new heights with Parents now having to buy ready made, incredibly expensive Gluten free foods.
More wonderful news…..IT WON’T!!!!!!!
 
We then realised how many more children and adults who cannot process Gluten could also benefit from our Books - that is when Books 2 & 3 were created.

Try this delicious recipe:
 
Dreamy Lemon Cheescakes:
Base:
1 cup pecan nuts
1 1/2 cups dates
1 cp dark 70% chocolate (watch the sugar content on pkt)
Filling:
2 tubs Toffuiti
juice and rid of 1 lemon
3 tspns of gelatine dissolved in 1/2 cup of hot water
Sugar to taste
 
Place pecans, dates and chocolate blocks into food processor and blend until sticky.
Either press into a pie dish or make individual pies in a muffin tin lined with patty cake cups.
Place into the fridge for 1 hr - 2 hrs.
Mix all of the filling ingredients together till smooth and add sugar to taste.
Pour onto base/s.
Chill for at least 2 hrs and keep in fridge.
